Natural wood, no matter how it was dried originally: air dried or kiln dried, will adjust to the ambient humidity in the atmosphere around it.  Even through a finish.  This moisture causes the cells of the wood to expand and contract as it enters and leaves the wood, not always equally.  If one surface expands more then the other it warps.  In small pieces this movement is minuscule and, if joints are properly done, will result in no appreciable change.  But on large flat surfaces like table tops, such movement can be considerable.  Proper design and construction can minimize this but nothing can eliminate it all together unless you replace the solid wood with a material that does not warp or curl, like plywood.
